We have very fine hand-dipped chocolates featuring the traditional sweet flavours of the Maritimes (Nova Scotia, in particular) - wild blueberries, cranberries, cherries and maple syrup - and a double coat of Belgian or French chocolate. Our chocolates are big, they are one-half fine chocolate, and they are unique. Our chocolates are a celebration of the flavours of Nova Scotia, and we are happy to share.
How they are made.
Most of the centres are started with a maple fondant, which is a moist mass of very fine sugar crystals. The fondant is similar in texture to firm maple cream or butter. Diffferent fruits and berries are added to the fondant, and then rolled up (by hand) into centres. The centres are hand-dipped twice in European chocolate, and then they are wrapped by hand in coloured foil, and packaged ready to be sold to our customers.
Why the chocolates are so good.
The chocolates have two coats of very good chocolate. On the first dip the centre picks up 4 grams of chocolate and on the second dip it picks up another 6 grams, for a total of 10 grams, or about half of the weight of the confection. (1 ounce = 28 grams). You can see from the picture that our chocolates have a good coat on them; compare this with your regular chocolates the next time you bite into one.
You won't find chocolates like these anywhere else, for a couple of reasons. One is that they use Nova Scotian ingredients like maple syrup, wild blueberries and cranberries - and these flavours are not commonly found in ordinary chocolates. Imagine candied wild blueberries in a soft maple centre, all dipped - twice - in Belgian dark chocolate. And sometimes... they soak the berries in Caribbean dark rum before folding them into the maple centres. Pick some up for yourself or as a gift for that someone special.
